Cadillac Oysters

Grown in pristine waters at the foot of Cadillac Mountain.
The cold Atlantic Ocean water gently mixes with water running off the mountain, giving you the fresh taste of Maine in every bite.

Growing Secrets

Our oysters are snuggled in a protected bay at the foot of Cadillac Mountain. The farm caps over with ice in winter and seals the flavor in. We save a few select oysters for Spring when the cold has refined the flavor to the rich sweetness of a fine ice wine.

Growing Method


The oyster seed is suspended in mesh bags in the clear cold waters surrounding Acadia National Park when just 13 mm long. Over time they are graded and given them as much space as they need to grow until ready. Only when they are perfectly ready do we send them out to you.

​Flavor Profile


Cadillac's have the most savory and umami-rich flavor experience. Notes of lobster claw/knuckles are immediate. Also some seaweed and nuttiness come through. They have a quick and clean finish.

Harvesting


The oysters are harvested to order, by hand. They are selected, packed, and shipped the same day on trusted carriers, to trusted wholesalers. We want our customers to enjoy the taste of these Oysters as we do, the cold, clean water, the pristine taste of Maine.
