Growing MethodThe oyster seed is suspended in mesh bags in the clear cold waters surrounding Acadia National Park when just 13 mm long. Over time they are graded and given them as much space as they need to grow until ready. Only when they are perfectly ready do we send them out to you.
Flavor ProfileCadillac's have the most savory and umami-rich flavor experience. Notes of lobster claw/knuckles are immediate. Also some seaweed and nuttiness come through. They have a quick and clean finish.
