A full-bodied oyster with a dynamic flavor profile, grown in pristine waters at the foot of Cadillac Mountain. The cold Atlantic Ocean water gently mixes with water running straight off the mountain, giving you the fresh Maine taste in every bite.

Down on the Farm


​​Farming oysters calls for close attention to a number of details, including the site of the farm, the husbandry to produce the right size, meat content and flavor profile.

Our Process


Oysters are bivalve mollusks. The species we farm is the American Oyster (Crassostrea Virginica), a species found naturally along the coast of North & South America. The growth cycle begins with the purchase of tiny (9-13mm) seed oysters from a Maine hatchery. These babies are carefully placed in nursery bags at the right densities so they can flourish in their life on the farm.

The next stage involves thinning the oysters out, to allow for more growth room, and handling them enough to form a nice shape and "cup". The cup allows room for the oyster meat to develop and gives a satisfying experience to savor these delicacies. This process of grading and giving them more room to grow continues over several years until the desired size class is reached. A lot of love and time is given to these beauties before they are offered to our customers.

They respond well to the amount of care and attention the farmer invests in them, and you will taste the difference when they are ready for market. A full briny start with appealing layers of flavor and a sweet finish.
